Maddur Vada is a popular snack, unique to the state of Karnataka, in the Southern part of India. The name ‘Maddur Vada’ comes from a town called ‘Maddur’, which is located between cities Bangalore and Mysore. These vadas are sold in abundance on trains that travel between the two cities.
This snack brings back so many lovely childhood memories. On almost every road trip to Mysore with my family, a stop at Maddur was an absolute must! We would polish these off with a cup of coffee or tea. We would also pack some extras for the rest of our journey.
These delicious crispy snacks are made with plain flour, semolina, onions, curry leaves and green chilies for some spice. The ingredients are mixed into a dough with a little hot oil and water. Sesame seeds or crushed peanuts and cashews are also sometimes added. A small piece of dough is rolled into flat discs and then deep fried. They are always served with a delicious coconut coriander chutney on the side. When you bite into them, they are crispy on the outside, soft and chewy inside.
My recipe is a baked version, for a slightly healthier option. Mix all the ingredients well and the best way to do it, is by hand. While mixing, squeeze the onions really well. They release their moisture. Therefore a lot of water isn’t required to form the dough.
The dough may seem tough and dry initially. But as the water in the onions start to release, the dough becomes soft. Grease your palms with a little oil and roll them into balls. Flatten them between your palms. Or roll them out between two parchment sheets and cut them using a round cutter. Do not make them too thin. Place them on a baking tray lined with parchment paper and bake them. Flip them halfway so that both sides turn golden brown.
Once baked, allow them to cool for 10 minutes and serve with a coconut chutney. They keep well for few days, stored in an air tight container inside the fridge.

This recipe yields 9 vadas
INGREDIENTS:
- All purpose flour/ Maida – ½ Cup
- Fine Semolina – ½ Cup
- Rice Flour – 2 Tbsp
- Finely chopped onion – 1 Cup
- Grated ginger – 1 Tsp
- Curry leaves – 10 leaves
- Asafoetida, a pinch
- Salt – 1 Tsp
- Red chili powder – ½ Tsp
- Hot oil – 2 Tbsp
- Water – ¼ Cup
METHOD:
- Preheat oven to 180°C. Line a baking tray with parchment sheet.
- Mix ingredients 1 – 10, in a bowl. Use your hand to mix well. Squeeze onions to draw out it’s moisture. Add water a little at a time to form a dough.
- Oil your palms. Take a small piece of dough and form balls. Flatten dough ball between your palms. Place on a baking sheet.
- Bake for 30 – 35 mins until the tops are golden brown OR deep fry until golden brown.
